A Journey Through Flavor and Place
Tequila Ocho is world-renowned for its commitment to terroir — the idea that every estate-grown agave reflects the unique characteristics of its soil, climate, and cultivation. For one night only, Sage guests will savor the distinct personality of five rare Tequila Ocho expressions, thoughtfully paired with an original five-course menu crafted by Executive Chef Christopher Covelli and Co-Executive Chef Vinnie Savadel.
The evening begins with a special welcome cocktail — Fly La Paloma Ocho, a house-crafted take on the classic Paloma — featuring Tequila Ocho Plata, Brovo Aperitivo, Aperol, and acid-adjusted grapefruit and lime juices, force-carbonated in-house.
